INGREDIENTS :
- 4 skinless chicken breast (about 9oz | 250g each breast)
- 2 tablespoons of olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon of dried basil
- 1 teaspoon of salt
- black pepper, to taste
- 1 1/2 tablespoons of chopped garlic, (5-6 cloves of garlic)
- 2 cups of wine or cherry tomatoes, halved
- 1/4 onion, peeled and sliced
- 1/4 cup of balsamic vinegar
- 1 tablespoon of brown sugar
- 3/4 cup fresh shredded mozzarella cheese
- 2 tablespoons of freshly chopped parsley or basil, for garnish
INSTRUCTIONS :
- Preheat the oven to 220 ° C | 430 ° F.
- Place the chicken breast in a baking dish and drizzle with olive oil. Season with oregano, basil, salt, pepper, and 1 tablespoon of chopped garlic. Rub seasonings all over the breast. Arrange the tomatoes and shallots around the chicken on a plate.
- Beat balsamic vinegar, sugar and remaining garlic in a jug to combine. Pour over the chicken breast, turning each breast in the sauce so that it is evenly distributed.
- Bake in a hot oven for 20-25 minutes (depending on the thickness of your chicken breast), or until it is no longer pink in the middle. Sprinkle with cheese and grill (or grill) for 4-5 minutes, or until the cheese is melted and golden in color. Garnish with parsley, and serve with rice or pasta covered in pot juice.
