Material :
- 12 eggs
- ½ cup of fat and organic mayonnaise
- Cream 4 full ounces of cheese

Instructions :
- If you have leftover boiled eggs, peel and separate the egg whites from the yolk.
- If you need to boil eggs, place them in a pan and cover with water. Bring to a boil, boil for 2-3 minutes, then remove the pan from heat and allow the eggs to cook in hot water, use the remaining heat for 10-12 minutes. Pour hot water and put the eggs in a bowl of ice water until it's cool.
- Another method is to boil the eggs for 7 minutes, then put them under cold water to cool.
- Peel and separate the eggs, add the egg yolks to the food processor.
- Add the egg white to the medium bowl. Add about 1/2 egg white to the food processor, and finely chop the remaining egg white and set it back in the bowl.
- Add mayonnaise, mustard, white wine vinegar, cream cheese, and hot sauce to a food processor. Process until smooth and soft.
- Transfer the mixture to the bowl with minced egg white. Season with salt and pepper, add minced chives and stir gently all.
- Transfer to the serving bowl dip, sprinkle with paprika or if you prefer something more spicy, you can use cayenne pepper.
- Decorate with minced chives and serve immediately.
- If you want to serve the sauce later, store it in an airtight container in the refrigerator or place it in a sauce bowl and cover with plastic wrap. Decorate with peppers and spring onions just before serving.
